orange cranberry bread

How to bake fabulous orange cranberry bread:


1 Find a recipe.


2 Whisk together your dry ingredients. Add zest from one orange (don't forget to look for a grater, realize it's dull, and use a vegetable peeler to make ugly zest).


3 Add wet ingredients, like orange juice and dried cranberries (Craisins!).


4 Mix until just combined.


5 Let batter rest for a few minutes for max rise-age. Laugh at your now-naked orange.


6 Pop into a 375° oven for 45 minutes.


7 Remove from oven. Smell.


8 Eat.

Results The orange and cranberry go together soo nicely. It's fresh and citrusy and smells amazing!

Orange Cranberry Bread
Adapted from Baking Bites

1 cup all purpose flour
1 cup white (or regular) whole wheat flour
1/2 cup sugar
3/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt (I used a generous 1/2 tsp of kosher salt)
3/4 cup fresh squeezed orange juice
1 tbsp orange zest (from one medium orange)
2 tbsp canola oil
1 large egg
3/4 cup sweetened dried cranberries

1 Preheat oven to 350ºF and lightly grease a 9x5 inch loaf pan.
2 Whisk together flour, sugar, baking powder, baking soda and salt in a large mixing bowl. Add in in orange juice, orange zest, oil and egg and mix until just combined. Stir in whole and dried cranberries. Spread evenly in loaf pan.
3 Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean (about 50 minutes in my oven) . Cool completely.

Makes one loaf.
